Vegan Peanut Butter Banana Bread

Banana bread is something I usually bake more so November October kind of time, I find it really cosy and filling, especially when eaten warm! It’s still so cold and miserable at the moment though that I decided I needed to bake it to give myself a little boost, and since its the first time I’ve baked a vegan version I thought I’d share the recipe I came up with! It’s super easy, because I hate complicated recipes, and the end product is delicious. Β The peanut butter give it a slightly different feel to usual banana bread, which I really like, but this recipe would still make a delicious normal banana bread if you were to leave it out!

4 banana’s

1 cup plant milk (I used almond milk)

3/4 cup melted peanut butter

1 tsp vanilla extract/flavouring

2 cups plain flour

1 tbsp baking powder

2/3 cup brown sugar

Step 1

Mash the banana’s with a fork, put them and all other wet ingredients, including the melted peanut butter, into a bowl and mix well to combine.

Step 2

In a separate bowl, combine all dry ingredients.

Step 3

Create a well in the centre of the dry ingredients and add the wet mixture, stirring well until fully combined.

Step 4

Pour mixture into a greased lough tin, I used a banana cut in half length ways with sugar sprinkled on top for decoration, and bake at 180 degrees Fahrenheit or gas mark 4 for around 45 minutes or until you can insert a knife into the centre of the loaf and draw it out clean.

Then you have your banana bread ready to eat!
