Since going vegan (almost a year ago!!) the only type of chocolate I’ve had is just plain bars of dark chocolate and I started to get a bit sick of it. I used to love Reese’s peanut butter cups and decided I wanted to come up with something that would taste at least similar (its almost exact!) to satisfy my sweet tooth without using too many ingredients, meaning theres only 3 things you need to make these!
Gather together your supplies of vegan chocolate of your choice, I used a whole big bar of bourneville (there is a chance of cross contamination from milk products but I don’t mind so long as theres no none vegan products in it intentionally), a cup of smooth peanut butter and half a cup of icing sugar. Mix the peanut butter and icing sugar together and place to one side.
Line a cupcake tray with cases, melt your chocolate either in 15 second bursts in the microwave, stirring between each burst or in a bowl over a pan of how water and thinly coat the bottoms of the cases. It should be thick enough that it’ll hold but not so thick that it’ll be difficult to bite through!
Grab your peanut butter icing sugar mixture and roll small balls, flattening them between your palms until they’re slightly smaller than your cases, then just pop them in and pour more melted chocolate over the top to encase them.
Refrigerate for at least a few hours if not over night and then they’re good to go! The only tastable difference between these and the peanut butter cups i used to buy is that they’re dark chocolate, but I prefer that now any way so I’m really happy with how these came out!
