Vegan Chocolate Mug Cake!

I promised you all a chocolate mug cake recipe in my last post, and I am now delivering! This is easy, fast and delicious, three of my favourite things, and even better theres next to no washing up afterwards!

For the cake, you only need 7 ingredients and they’re all ones I think most people have in the cupboard anyway, though if not they’re easy to find just about anywhere.

1 TBSP Cocoa Powder

3 TBSP self raising flour

3 TBSP granulated sugar

1/4 TSP Baking Powder

3 TBSP melted vegan butter (Or coconut oil, it turns out and tastes the same either way)

3TBSP plant based milk (I usually use soy or hemp milk)

1TSP vanilla extract

You put it all in a mug, in any order you fancy, stir it, put it in the microwave for between 50 seconds and a minute, or just until cooked depending on your microwave, and you’re done! You have a chocolate cake!

I decided I wanted to make mine a bit more fancy, not that its really fancy but let me pretend to be sophisticated please! For this coffee icing, you just need:

1 TSP instant coffee

1TBSP icing sugar

1-3 TSP water

Mix it all together until its the consistency you’re looking for and then pour it on top. I also added some lightly toasted walnuts and almonds, because if you put nuts on something its healthy.
