How to Eat Your Greens!

I’ve seen a lot of people on the vegan Facebook groups I read asking for recipes including leafy greens like spinach and kale that taste good and are filling, and seeing all the talk made me notice that a lot of people don’t know what they can do to make tasty meals with leafy veg so I’m here to save the day by sharing my favourite meals! You get three veggies in one meal and as long as you like broccoli you’ll like this!

I’m at a point where I make this almost daily so you can believe me when I say I think it’s great. A handful of Tesco’s fake chicken chunks, some nicely chopped broccoli, sliced spinach and kale with the stalks removed since I found they were the bit I didn’t like!

I cook that up all together with just a little bit of oil in a frying pan and sometimes add some fresh chopped garlic or herbs, or sometimes sweet chilli sauce to spice it up a bit too.

I then add it to anything I have to hand. Potatoes, pasta, rice, couscous, wraps, noodles, it tastes good with just about any carb you can think of and that’s why it’s something I eat so often! I know this is the simplest recipe ever but I hope it helps out someone who’s been wondering how to eat these vaguely gross leaves!
