I feel like with the weather the way it is in the UK at the minute, everyone needs a good slice of cake. I know for sure I did but unfortunately its not all that easy to go out and buy vegan cakes, so I made my own and tried to make it the easiest, lowest effort kind of recipe possible.
I kept the ingredients simple since I didn’t want to have to go to the shop in this weather!
1 and 3/4 cups flour
1/2 cup white sugar
1/2 cup brown sugar
3 tbsp ground cinnamon
1 tsp baking soda
1 tsp baking powder
1 tbsp lemon juice
1 tbsp vanilla extract
1/3 cup any kind of liquid oil, I used vegetable oil
This recipe is as easy as putting all your dry ingredients in a large mixing bowl and giving them a good stir through, then adding all the wet ingredients. Stir well until you have a smooth, lump free cake batter.
I used an additional table spoon of cinnamon for extra flavour and to create a fun bit of marbling on the top, but its not necessary and I ended up covering the top with icing sugar anyway. Heres a picture of how it looked without the covering though, you can see it was quite pretty!
Bake at 180 c for around 18 minutes, or until you can insert a knife or tooth pick and have it come out clean, and you’re done! Since I was going for easy with this cake, I cheated and used some shop bought chocolate icing we happened to have in the cupboard rather than make my own. I used two spoons to create a line of icing where I wanted the icing to start, then just used one of the spoons to pull the icing to the edges and I think it looks really nice. It’s quite a rich icing so I didn’t want to cover the whole cake with it, doing it like this gave it a good amount to go with the flavour of the cake.
