To carry us from yesterday I wanted to share the stew I’ve most often been having lately. It’s warming, filling and delicious, it takes a while to make but that’s mostly time spent leaving it to simmer rather than actually having to do anything.
I like to keep this stew simple so I don’t add any fake meats, for around 8 servings I use 3 carrots, 3 parsnips, 2 small brown onions, 6 potatoes, two small cloves of garlic and around 5cm of ginger. I peel everything and use that to make the vegetable stock before chopping all my vegetables and putting them in a pan with just enough water to cover them. I then put the lid on and bring it to a simmer on a medium heat.
Once everything is simmering I add around a cup of frozen peas to the mix and 4 cups of stock before again bringing it up to a simmer and leaving it for around twenty minutes. Once the twenty minutes is up I scoop out a cup of liquid, add 3 tablespoons of corn flour and whisk until it’s totally smooth. I then add that back to the stock along with a good pinch of salt and two teaspoons of mixed herbs, give it a stir and put the lid back on for around 40 minutes.
Then your stew is done! This is a great place to make your own additions like adding an already cooked vegan meat or, in my case, making dumplings!
