We all have those days that the fridge is a bit bare, and you want a good sandwich. I can’t speak for anyone else, but I love a good slaw on, well, pretty much anything, but I never have cabbage and stuff like that in. Obviously I had to come up with something, so here’s the absolute easiest, super delicious, vegan slaw!

Everything you need is in the picture above, just four ingredients! I made enough for 2 sandwiches, which took;
- 1 small red onion
- 1 small carrot
- About 5 fresh mint leaves
- Vegan mayo
If you’re not vegan, you can obviously just substitute normal mayonnaise, and if you want it to be even better, while still being vegan, I think the Hellmans vegan mayo is by far the best, but the Chippa May-o is usually on sale for £1, and who wants to spend more than you have to?!
It couldn’t be any easier to make either, I simply diced the onion and mint, grated the carrot using quite a fine grater, and mixed it all together with about half a cup of mayo. I did also squeeze out some of the extra moisture from the carrot, but I don’t think that’s really needed.

And just like that, you have the perfect slaw for a delicious sandwich! If you try this, let me know what else you put on your sandwich! I’m a big fan of having it with onion bahji and a bit of extra mayo!

I’ve heard a tip to mix apple cider vinegar in, to make your mayo stretch further. I like your addition of red onion to usually carrot and cabbage.
