You might notice I didn’t call this a recipe, and that because I have never in my life used a recipe to make pancakes. I find the most important thing about pancakes is the toppings, and the consistency of the batter, as long as those are good, everything else will work out okay! So, all you need to make these is
- Soy milk
- Blueberries
- Sugar
- Salt
- Flour
- Baking soda

I mush up the amount of blueberries I fancy using and put them in a bowl, then add soy milk to cover them, and stir it together well. The milk will go slightly purple, and i think it helps spread the flavour. Then I add a good sized pinch of sugar, a tiny bit of salt, and some baking soda and mix it all again.
Finally, bit by bit, I add self raising flour, stirring as I add it until it’s the consistency of a thick gravy. Then it’s as simple as a bit of oil in a frying pan on medium heat, and cooking on both sides until done!

As someone who loves pancakes for breakfast, I wouldn’t ever bother making them if I had to follow a recipe. They’re a difficult thing to do badly, so just throw it together and see how it goes! You’re sure to master it after a couple of attempts.
