I’m a big fan of cookies, because who isn’t, and there’s a place near me called Kissim that DELIVER the most amazing cookies I’ve ever had. I can’t afford a fiver every time I fancy cookies though, which is a lot, so it was time to make my own. They some how turned out… Incredible? Really, they’re amazing, so here’s the recipe!

Ingredients
- 1/2 cup vegan butter, i used Flora
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 4 tablespoons soy or other none dairy milk
- 1 1/2 cup self raising flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 bar of bourneville dark chocolate, chopped up
- 1/4 cup almonds, roughly chopped

As well as being delicious, they’re also incredibly easy. Literally just put everything in a bowl and mix it well. Prepare a baking tray with some baking paper on it, roll some evenly sized balls, and place them on the tray evenly spaced apart. You should have enough dough for 12 cookies the same size as mine, which I baked in two batches.

Bake them at 170 c for 10 minutes, leave to cool for another 15 for the best result, and boom, you’ve got some delicious, soft but chewy, perfectly sweet and just bloody amazing cookies.

I’ve not tried it myself, but I’d assume it’d be okay to freeze the dough in balls, then bake them an extra few minutes when you want then!
